My favorite gluten free flour to use is Bob's Red Mill 1 to 1. You can literally make just about any "normal" dish/dessert gluten free with this flour. I feel that this flour really helps mask that "gluten free" taste. Some gluten free products/flours have a grainy or chalky taste, but this flour doesn't leave that taste in your mouth. It really makes you wonder if this is actually gluten free for how good it makes food taste. I have played around with many different recipes using this flour and I have been pleased with all of of them. I use this flour for everything from cookies to pizza to buns and pancakes/waffles. It is very universal. I admit, it is a bit pricey, but for the quality and flavor it is definitely worth it. I tipically get it from Bob's Red Mill directly, but Amazon has it along with most grocery stores. Amazon and Bob's Red Mill you can buy in bulk which is what i do, because I use it often, it is cheaper that way for myself. I have tried almond flour, but Almond flour tends to be grainy and sweet, so this kind of flour gives me a balance and I can use it universally, whereas, almond flour would be most used for baking, if I used it. That's the fun with cooking and baking is finding what works best for you. What works for me, might not work for you, and thats ok. We are on this journey together. Finding yummy and healthy dishes is the goal.
