I'm a huge fan of sauces and food mixed in sauces. This dish is a good mix for both. It has a nice crunch and just enough sauce to please anyone's taste buds. I also like to add some spice, because why not? It is hard to enjoy certain dishes because its not gluten free. This recipe takes the flavor of a favorite dish and makes it gluten free and makes you question if it is really gluten free. The cool thing about this dish is that it is a kid favorite. When I made it, my siblings said it tasted like Orange Chicken. I have never had Orange Chicken, so I just took their word for it. They all loved it. I hope you find this recipe as good as my family and I did. It has become one of my favorites.

Servings for 4

1lb Chicken Breast

Salt to Taste

Pepper to Taste

1 Cup Cornstarch

2 Eggs Beaten

Oil to Fry (Extra Virgin Olive Oil)

Sauce

1T Oil

2 Garlic Cloves Minced

1 Green Bell Pepper, Diced

1 Red Bell Pepper, Diced

1 Onion, Diced

1/4 Cup Distilled Vinegar (More if needed)

1T Gluten Free Soy Sauce

1/4 cup BBQ Sauce (I used Sweet Baby Ray's)

1/2 Cup Sugar

  1. Cut the chicken into bite sized pieces and then add the cornstarch to the chicken.

  2. Heat the oil in a frying pan, enough to fry the chicken (About 1-2 inches high in pan).

  3. Once oil is hot, add a few pieces of chicken at a time and let cook until golden on each side. Add to a separate bowl once completely cooked.

  4. While the chicken is cooking, you can start making the sauce. In a small pot, add in the oil and then add in the garlic. Let cook about 1 min.

  5. Add in Bell Peppers and onions and cook until soft.

  6. Add vinegar, soy sauce, bbq sauce, and sugar. Stir until well blended. Cook for about 2 minutes.

  7. By this point all of your chicken should be done. Add sauce to cooked chicken. Mix and enjoy.

This can be served with steamed rice or veggies. You can even add the sauce to the veggies or instead of chicken use veggies to make this dish. The sauce should be on the sweeter side.
