Zesty Pulled BBQ Chicken Sandwich

This is a fun summer time or anytime dish. This dish calls for 20 chicken tenderloins, parsley, garlic powder, chili powder, paprika, BBQ sauce and water. I made this dish in Emeril Lagasse's Pressure Cooker. If you have a pressure cooker, use the round grill piece, place inside the inner pot. In a bowl, add the chicken, parsley, garlic powder, chili powder, paprika, and BBQ sauce, mix together. Add water in the inner pot just below the grill piece. Next add the chicken to the inner pot and then add more BBQ sauce as desired. If some chicken falls under the grill piece that is ok. Add the pressure cooker lid and turn to lock it. Set it to poultry under the pressure setting and let it cook 15-30 mins. Once the chicken is cooked, transfer it to a bowl or dish where you can then pull it apart using two forks. It should peel apart very easy. Add the juice from the inner pot to the chicken and top with BBQ sauce and mix. Add to your favorite bread and top with shredded cheese and enjoy.
If you don't have a pressure cooker that is ok. you can still make this amazing dish on the stove and cook for 15-20 mins. In a bowl, add the chicken, parsley, garlic powder, chili powder, paprika, and BBQ sauce, mix together. Next add the chicken to a medium saucepan and then add more BBQ sauce as desired. Next add about a half a cup of water to the pan. Cook covered over medium heat. Turn chicken half way through cooking, add a little more water and BBQ sauce if needed through cooking. Once the chicken is cooked, transfer it to a bowl or dish where you can then pull it apart using two forks. It should peel apart very easy. Add the juice from the pot and top with more BBQ sauce as desired and mix. Add to your favorite bread and top with shredded cheese and enjoy.
If you are using the oven cook for 20-30 mins. In a bowl, add the chicken, parsley, garlic powder, chili powder, paprika, and BBQ sauce, mix together. Next add the chicken to an oven safe dish that can hold the tenders without overlapping and then add more BBQ sauce as desired. Next add about a cup of water to the pan. Bake covered at 350 degrees F. Turn chicken half way through cooking, add a little more water and BBQ sauce if needed through cooking. Once the chicken is cooked, transfer it to a bowl or dish where you can then pull it apart using two forks. It should peel apart very easy. Add the juice from the pan and top with more BBQ sauce as desired and mix. Add to your favorite bread and top with shredded cheese and enjoy.
